Job Description

JOB SUMMARY

As part of the management team, the Campus Dietitian works under the direction of the general manager and senior executive chef to plan, organize, direct and lead nutrition, allergens, dietary accommodations, and sustainable dining on campus. This position assumes responsibility for some or all of the following: recipe compliance, menu engineering, wellness events and engagement and guest dietary needs. The Field Parkhurst Dietitian interacts with team members, customers, guests and other facility department personnel. Performs related duties as assigned.


ESSENTIAL FUNCTIONS

Guest Engagement and Education - 50%

  • Provide nutritional or allergen/dietary information on the foods and products we offer on campus.
  • Works with the culinary team to ensure student's dietary needs are being accommodated and arranges for specially prepared meals, purchase of prepackaged foods or sourcing special requests when the daily menu offerings do not meet their student's specific documented dietary needs.
  • Works with student accessibility/disability services and campus health services for proper student registration and medical documentation as it pertains to meal plan exemptions and accommodations.
  • Provides individual tours to students and parents to familiarize them with our dining locations and to identify options related to their specific condition and dietary needs and restrictions.
  • Collaborate with the University on sustainable food initiatives that contribute to overall guest wellness (plant powered, local, sustainable sourcing, carbon emissions).
  • Ensure our dining program supports the various needs of the Loyola Community in our menus and programming (Examples: Athletics, Student Health, Faculty/Staff, First Year Students, etc).
  • Collaborate with the Marketing Manager and Parkhurst Brand Dietitian to develop programs and resources to educate and promote wellness in dining for different topics and events (Wellness Fair, Athlete Nutrition, Faculty Wellness, NNM, Whole Grains, etc).
  • Conduct engagement tables, sampling, educational series, and other events or promotions to support wellness in dining.
  • Establishes and maintains excellent client relations and customer satisfaction.

Menu Compliance and Engineering - 25%

  • Working in collaboration with the culinary team on recipe database management (Netmenu) to make sure all recipes are input and accurate.
  • Assists management team in developing menus, product placement and pricing strategies that support health and wellness.
  • Validate top nine allergens and special diet (gf, vegetarian, vegan, halal) notations are correct for recipes.

Compliance + Training - 25%

  • Validate accurate portions, allergens and labels are on our menu display program for guest needs.
  • Oversee the AllerTrain program for our team members and provide supplemental training as needed.
  • Conduct Allergen and Cross Contact Audits in dining locations to make sure procedures and policies are being followed.

Qualifications:

  • Must be a Registered Dietitian (RD/RDN) with 2+ Years of relevant experience
  • Licensure in State of Maryland (required)
  • Collaborative, yet self-directed and independently motivated
  • Excellent interpersonal, communication and leadership skills.
  • Proven ability to lead other managers or supervisors.
  • Strong planning and organizational skills to consistently meet deadlines.
  • Proficient in Microsoft software programs.
  • Familiar with Health At Every Size and Intuitive Eating Principles
